Ingredients
1 lb. ground beef
1 small onion, diced
1 can (4 oz.) diced green chilies (optional)
10 flour tortillas
2 1/2 cups red enchilada sauce, canned or homemade
2 cups cheddar cheese, shredded
sliced olives for topping
Directions:
Using a large pan add the meat. Sauté ground beef on medium heat, using a spoon or spatula, disperse the meat to small crumbs. Cook the meat until a brown scorch appears. Add chopped onions and green chilies to the mixture. Extend cooking until onions become translucent.
Spread ½ a cup of red enchilada sauce onto the bottom of a 9” x 13” baking pan.
Assembling the enchiladas:
Open the tortillas on a flat surface. Using a spoon, fill in the tortillas with ¼ to 1/3 cup of meat mixture. Drizzle over the mixture 2 tablespoons of cheese.
Close the tortilla tightly across the filling and place it in the baking pan (seam-side-down).
Repeat this procedure for the other remaining tortillas and align the tortillas neatly into the pan. Decant the rest of the enchilada sauce on top of the tortillas.
Above all sprinkle the cheddar cheese and sliced olives.
Using aluminium foil, cover the dish and put in an oven at 350oF and bake for 20 minutes.
Remove the aluminium foil and leave the cheese to melt for around 5 minutes.
Serve instantaneously.
