Crockpot Italian Chicken 'Stew' Recipe
Ingredients:
3 or 4 boneless, skinless chicken breasts
Italian dressing (optional: 10-12 ounces non-fat)
½ cup shredded Parmesan cheese
Few pinches of Italian seasoning (optional: Mc Cormick’s ‘Perfect Pinch’)
4-6 red potatoes cleaned and cut into wedges
4-5 carrots washed, peeled and cut into chunks
Start by covering the inner side of the crock-pot using a cooking spray. Consequently sprinkle some of the Italian dressing transversely on the bottom of the pot. Two of the chicken breasts can now be placed inside the crock-pot.
Use some of the aforementioned dressing to cover the chicken, together with some Parmesan cheese and Italian seasoning. Insert the remaining chicken breasts inside the crock-pot above the ones already in place. Again, cover the breasts with some Parmesan cheese.
The carrots can now be added into the crock-pot. Use some dressing and seasoning and add the red potatoes on top of the stew. Optional: one can increase more dressing, cheese and seasoning to augment the flavour.
