Ingredients:
1 grilled chicken breast, sliced
2 hard boiled eggs, peeled and sliced
2 small thin-skinned potatoes, scrubbed, boiled and quartered
4 handfuls spring salad mix
12 Kalamata olives
4 radishes, sliced
For vinaigrette
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
salt
freshly ground black pepper
Divide salad mix between two plates, place the rest of the ingredients on top. Whisk vinaigrette components with a fork until emulsified, dress the salad.
